Braised Beef Short Ribs
Ingredients
Makes 4-6 servings | Gluten-free and dairy-free

Ingredients -use organic whenever possible
2 Tbsp solid fat (butter, lard, coconut oil)
2-3 pounds beef short ribs
salt and pepper to taste
1 small onion, diced
2 carrots, sliced
3 celery ribs, sliced
5 cloves of garlic, diced, and left to rest for 10 min.
3-5 cups of dry red wine, or beef broth (or use a combination of both)
4 sprigs of fresh thyme
