Grain Free/Sugar Free Pumpkin Bars

Ingredients

  • 1/2 c pumpkin purée
  • 1/2 c almond butter
  • 2 eggs
  • 1/3 c swerve (or 1/3 c honey)
  • 3 tsp pumpkin spice
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • optional (but highly recommended): stevia/monk fruit sweetened chocolate chips
Grain Free & Sugar Free Pumpkin Bars

Directions

  1. Preheat oven to 350 F and grease pan with avocado oil spray.
  2. Combine all ingredients in a bowl, mix until well combined and the batter is smooth.
  3. Transfer batter to the pan, and top with chocolate chips (if desired).
  4. Bake for 25 minutes, or until a toothpick comes out clean, and let cool completely before cutting into.
