Lemon Dill Salmon Burgers

Ingredients

Salmon is a wonderful food for the brain, providing the much needed Omega 3s to support optimal brain function. Studies have shown that a healthy ratio of Omega 3 to 6, improves attention and focus, mood, and memory. Organic wild-caught salmon steaks can be expensive, but the canned variety offers a more affordable meal that your family will love!

INGREDIENTS

2 cans of cooked wild-caught salmon - approximately 15 oz in total

2 large eggs

1/2 cup of quinoa flakes and if not available, almond flour works well

1/2 tsp of powdered garlic

2 TBSP of fresh parsley

2 TBSP of fresh dill

Juice of 1/2 lemon

2 TBSP avocado oil for cooking

Lemon Dill Salmon Burgers

Directions

1. Combine all ingredients for the burgers in a bowl. Shape into 4-5 burgers -according to size preference.

2. Heat the avocado oil in a skillet over medium heat. Cook burgers for about 4-5 minutes until golden, then flip and cook another 2-3 minutes.

Although a gluten free bun, dijon mustard, avocado and sprouts make the perfect salmon burger, I also love to serve the burgers with a colorful cabbage salad instead. Enjoy!
